The recipe for today is very simple once we have roasted the vegetables. Is puff pastry and escalivada coca I do it many times as dinner or also as a snack at family gatherings. It is very rich and is quite light, so at home it is always finished in the blink of an eye.
For this recipe I do not use onion, I only roast red peppers and aubergines, as I explained in the escalivada recipe that I shared with you a while ago.
Puff pastry and roast cake
This coca de escalivada with anchovies is delicious and is very easy to prepare.

Ingredients
- 2 large red bell peppers roasted in strips
- 1 large aubergine roasted in strips
- 4-5 tablespoons of tomato sauce
- 1 puff pastry plate
- 1 can of anchovies
- shawl
- olive oil
Preparation
Roll out the puff pastry on an oven-safe tray and pierce it with a fork to prevent the puff pastry from puffing.
Cover the puff pastry with the fried tomato.
Then place the strips of peppers and aubergines making stripes.
Lightly salt the vegetables.
Spread the anchovies on the surface of the vegetables.
Sprinkle with a drizzle of olive oil.
Place in the oven preheated to 210ºC and bake for about 15 minutes, until we see that the puff pastry has browned.
It can be consumed warm or cold as you like.
