Delicious purees to accompany Christmas roasts

Generally a piece of fish and roast meat It is best cooked with just a little salt and its own juice, without many other ingredients to hide the true flavor of the baked product.

At the time of eating it, although the roast should be tasty, tender and juicy, maybe for the children and some older be a bit boring and bland. We therefore have to put some garnish on the plate to accompany the roast.

We propose you as a first idea some purees. Kids love them because They are soft and we can give them flavor by enriching them with ingredients that they like such as cheese and some sausages or sauces.

Let's start with a classic mashed potato enriched with a cheese pronounced flavor such as emmental, cheddar or camembert. The potatoes can be baked in the oven so that they accompany better with the flavor of the roast. We peel and crush them together with a little crushed onion sauce and the chosen cheese.

Another variant for the cheese puree can be made with pumpkin, carrot or sweet potatoes, ingredients with which we will get a garnish sweeter.

Very typical is also the puree of chestnuts. It is based on boiled and beaten chestnuts. We can enrich it with butter, bits of sautéed bacon and a little cream.

With bacon, ham, or sausage chopped we can accompany a puree of roasted or cooked fruits like apples, pears, plums, dates, or figs. If you see that it is too cloying, do not hesitate to reduce it with a little cooked potato.
