Both for those who are tricky in the kitchen, as for those who are not so, this quiche tomato and zucchini is the easiest to prepare. In order not to get too complicated, we have bought the puff pastry sheet directly, but the quiche is just as good.

Ingredients

  • 1 sheet of puff pastry
  • 2 tomates
  • 1 Zucchini
  • 300 gr of goat cheese
  • 250 ml of cream for cooking
  • 1 egg
  • Extra virgin olive oil
  • Sal Island
  • Pepper
  • Provencal herbs

Preparation

  1. We prepare a griddle on the fire and cut the tomatoes and zucchini into very thin slices. We put a drizzle of olive oil on the grill and roast them little by little until they are golden brown.

  2. Once we have the vegetables ready, we preheat the oven to 200 degrees and prepare the mold that we are going to use.
    Once we have the roasted tomatoes, preheat the oven to 200º. Prepare the mold that we are going to use, and spread the puff pastry plate on it. Prick the base and the sides of the puff pastry with a fork so that it does not rise too much.

  3. We bake the puff pastry for about 10 minutes, ensuring that it does not burn.

  4. While we have the dough in the oven, in a container we mix the cream, the egg, the salt and the pepper. When we have everything well mixed we add the goat cheese and stir everything very well so that all the ingredients are well incorporated.

  5. We take the dough out of the oven and pour the mixture over it. We put a little more goat cheese, and decorate the quiche with the roasted tomato and zucchini, and decorate with Provencal herbs.

  6. We put the quiche back in the oven at 180 degrees and let it cook for approximately 10 minutes until we see that the top is done.

  7. Serve it warm and enjoy the quiche.
