Ragú in bianco, the Bolognese sauce without tomato

As with pizza 'in bianco', this typical Italian minced meat sauce is tomato-free. Nonetheless it is tasty as it contains many varieties of vegetables, herbs and spices. It is also important to add a good wine and broth to cook the sauce over a very low heat. The white ragout can serve us as a sauce for pasta and to fill lasagna, cannelloni or crepes.
