500 g flour
250 g of sugar
250 g shortening or lard
3 eggs
2 teaspoons yeast
250 g of citron/canned angel hair (one can).

Preparation

Beat the eggs in a bowl, adding the softened butter
Also mix the sugar until everything is well incorporated.
In another bowl, we mix the flour with the yeast; Gradually add the flour to the butter mixture, kneading well
When we have incorporated all the flour, let the dough rest for at least an hour.
After the time has elapsed, we preheat the oven to 180º C
We spread the dough on the previously floured countertop
We must achieve a thickness of approximately 1.5 cm
With a cookie cutter, make circles in the dough and put a teaspoon of cider in the center (do not fill too much or it will come out)
We cover with another circle, folding the edges up so that the filling does not come out
We can also seal both parts with a fork the way we do with the dumplings.
Place the cakes on the baking tray lined with parchment paper (this is the time to brush them with egg white if you wish) and bake them for 15-20 minutes, until golden brown.
Let cool completely on a wire rack before eating.
