We go with a rice cake that is very easy to prepare and very complete, as it has vegetables and cheese. If we have leftover rice in white, this recipe is ideal to take advantage of it. Rice already tends to drive children crazy, but If we serve it originally like in this recipe, we also make sure they eat some veggies.

Ingredients

  • 100 grams of rice
  • 1 red pepper
  • 1 yellow bell pepper
  • half a floret of broccoli
  • 200 grams of spinach
  • 1 cebolla
  • 1 garlic clove
  • 2 eggs
  • 75 grams of Parmesan cheese
  • 50 grams of cheddar cheese
  • 1 tablespoon pine nuts
  • dried tomato powder
  • oil
  • parsley
  • shawl
  • pepper

Preparation

  1. Finely chop the onion, garlic clove and peppers. Boil the broccoli for about 5 minutes, strain it and reserve. Boil the spinach and let it drain well.

  2. In a pan with a little oil, sauté the onion and garlic for a few minutes.

  3. Add the peppers and fry everything together for a few more minutes.

  4. Add the broccoli and spinach and finally the parsley, dried tomato and pine nuts, and leave it all together for a few more minutes.

  5. Meanwhile, we will have cooked the rice in salted water.

  6. Drain it and mix it with the sauce and the chopped Parmesan. Beat the two eggs and add them to the rice.

  7. We pour it into a baking dish that we will have greased with oil, and we put pieces of cheddar garnishing on top.

  8. We put the mold in the preheated oven at 180 degrees for half an hour. Unmold and serve the cake with some sauce.
