350 gr of Sabroz rice
200 gr of chicken breast
16 cherry tomatoes
1 red pepper
1 green pepper
½ onion.
150 gr of feta cheese
A few coriander leaves
50 gr. corn

Preparation

We cook the rice, in our case, we have used Sabroz rice, a round rice that absorbs all the flavors and is always just right. What we like the most is that you can prepare it in advance and after a few hours it is perfect, as if it had just been made.
Once we have it cooked, (about 15 minutes so that it is loose), we let it rest in a medium-size container.
Prepare a frying pan with a little olive oil and sauté the chicken breasts cut into small pieces, previously seasoned. Once we have them cooked, we remove them from the heat and leave them reserved.
Peel the onion and cut it into small pieces. We do the same with the peppers and mix them with the onion.
Cut the feta cheese into small pieces and add it to the mixture along with the chicken. And finally we cut the cherry tomatoes in half, and added them.
We mix all the ingredients with the rice in a salad bowl, stirring it, and add a splash of oil, vinegar and a pinch of salt together with the chopped coriander. We stir again so that everything is well integrated.
