Parmesan Roasted Potatoes
These Parmesan Roasted Potatoes are delicious and are a healthier way to eat potatoes at home.

Ingredients
- 4 medium potatoes
- 1 tablespoon olive oil
- 4 dientes de ajo chopped
- ½ teaspoon Maldon salt
- ¼ teaspoon black pepper
- 100 gr of grated Parmesan cheese
- 1 tablespoon chopped parsley
Preparation
Clean the potatoes and remove the excess sand because we are not going to peel them. So try to use potatoes that do not have too much skin. Cut the potatoes as you normally do fried, and once you have all cut them, let them rest for about 30 minutes, in a container with water completely covered.
Preheat the oven to 180 degrees. Drain the potatoes and dry them. Paint them with olive oil and top with the minced garlic, salt and pepper. On a baking sheet put parchment paper and spread the potatoes in a single layer and bake for about 30 minutes, turning the potatoes every 10 minutes.
In a bowl, mix the Parmesan cheese with the parsley, and just as you remove the potatoes from the oven, place them on a plate and sprinkle the Parmesan and parsley mixture on top. Serve immediately. Delicious!!
