Ingredients
- Extra virgin olive oil
- 25 g onion
- 10 g of celery
- 1 garlic clove
- 900 g roasted pumpkin
- 700g milk
- Nutmeg
- Pepper

Preparation
We put the oil in a saucepan. Add the onion, the garlic clove and sauté it for a few minutes.
We remove the garlic clove.
We add the roasted pumpkin, crushed or not, in this case it does not matter.
Then we add the milk and let it cook for about 15 minutes.
We grind everything well with a food processor or with a mixer.
Adjust salt and pepper and serve hot.
Notes
To roast the pumpkin we have to wash it well and then chop it. We will put those pieces of pumpkin on a baking tray and we will bake at 180º for approximately 50 minutes.
