We are going to prepare a pesto species with one of the most beautiful vegetables that we can find in the market: the roman broccoli.
This pesto you can use it in your toast, to accompany rice or pasta dishes and even to give a little joy to grilled meat and fish.
Do you dare to try it? If you do not have Roman broccoli, do not hesitate to substitute it for the traditional broccoli. You will obtain a cream of intense color that will also be delicious.

Ingredients
- 300 g Romano broccoli
- 30 g parmesan
- 30 g walnuts
- 10 g pine nuts
- 10 g parsley
- 70 g of extra virgin olive oil
Preparation
We chop the broccoli and wash it.
We cook it in boiling water.
Once cooked, we remove it from the water and put it in a bowl of cold water to cut the cooking.
After a minute we take it out, drain it and put it in our glass to crush. We also put the Parmesan, walnuts, pine nuts and parsley there.
We crush it.
We incorporate the oil and salt that we consider necessary. We grind again.
We put it in a jar or a bowl if we are going to consume it immediately.
Notes
If you want it to be less caloric, you can substitute the 70 g of oil for 30 g of oil and 40 g of water. It will not be a pesto but it will also be very good.
