Roscón de Reyes with natural yeast

I couldn't end the day without posting a Roscón de Reyes with natural yeast.

Natural yeast is a sourdough that some of us have at home and that we feed periodically. Its use is not easy (it requires time and practice to know it) but the results are very gratifying. It can be created starting from flour, water and another ingredient such as yogurt or honey, but the process takes time ... it is all easier if we find someone who wants to share theirs with us.

With this yeast we can make loaves of bread and all preparations containing baker's yeast, adapting the amounts of water and flour. As in all fermented doughs, we will have to play with two basic factors: time and temperature.
