It looks like a sponge cake but the dough for this sweet is prepared with fresh baker's yeast. It has cherries, a fruit that is now in season, but you can substitute these pieces of fruit for apple, pear or peach.
It is great for breakfast or a snack and it is easy to make since we will put the dough directly into the mold: a simple oven safe dish.

Rustic cake with cherries

Ingredients
- 20 g fresh baker's yeast
- 120 g of water
- 1 pinch of sugar
- 500 g flour
- 1 pinch of salt
- Cherries
- 4 eggs
- 130 g de azúcar blanquilla
- 50 g of whole cane sugar
- 130 g butter at room temperature
Preparation
- We put the water, half the flour (250g), the sugar and the yeast in a large bowl.
- We mix and knead until we obtain a ball like the one seen in the photo.
- Cover with film and let it rest for about 30 minutes.
- In another bowl (or in the same but empty) we put the eggs and sugar.
- We beat it.
- Add the rest of the flour, the raised dough and the butter at room temperature.
- We mix well. We will obtain a fairly liquid dough, like the one obtained when preparing some cakes.
- We put it in a suitable baking dish or in a mold (of the sponge cake).
- We place a few cherry halves on the surface, pitted.
- We let it rest for about 1 hour.
- After that time we bake it at 180º (preheated oven) for approximately 50 minutes. If after the first 40 minutes we see that the surface is browning too much, we can cover it with aluminum foil and continue with the baking.
