Today's cake has quark cheese, butter and milk so it's rich in dairy. I have called it rustic for its consistency. In the photos you can see, we obtain a more compact mass than usual that is reflected in the final result: a sponge cake consistent and delicious.
We will put some finite apple wedges on the surface that will give creaminess to the top of the cake. You can put more apple if you want, in pieces, and mix it with the dough. It will also be great.
