500 gr. fresh or frozen peas
100 grams of smoked bacon
2 tablespoons olive oil
1 chive
1 Carrot
2 celery
un Bouquet Garni (a sprig composed of parsley, bay leaf, thyme and a little of the green part of the leek)
2 liters of water

Preparation

In a wide saucepan, sauté the chopped bacon in its own fat until lightly browned.
Add the oil to the pot and then add the very chopped vegetables until they are well poached.
Salt and add the bouquet of herbs together with the peas (if they are frozen it does not matter if they have not been thawed previously) and continue to sauté for 5 minutes.
Then we add the water and raise the heat so that the stew boils until the peas are tender.
Remove the bacon and herbs and beat the stew until obtaining a fine cream.

Notes

Another option: We can eliminate the bouquet garni from the stew and replace it with a little mint or fresh mint, which combines very well with the peas. In the case that we add this herb to the cream, we will put it directly in the blender glass since when it boils it loses its fresh flavor.
