For about 810 tartlets

500 gr of Parmesan cheese
1 tablespoon fresh rosemary
50 gr de harina

For the filling

250 gr of fresh spinach
50 g of sliced lightly toasted almonds
Olive oil
Balsamic vinegar
250 gr of strawberries

Preparation

In a bowl, mix the grated Parmesan cheese, rosemary and flour. Heat a nonstick skillet over medium heat and once it is fully hot, add about two tablespoons of the mixture and make a circle with it. Cook everything until the mixture is completely united, and begins to brown before turning it over and toasting it on the other side, being careful not to burn it.
Flip and brown on the other side for about 30 seconds more.
With the help of a spatula, lift the circle to remove it and put each of the circles that you are making with the Parmesan cheese, on some muffin molds so that they stay in that shape. She repeats with the rest of the cheese circles. Let them all cool so that they acquire the shape of a muffin mold, and when they are done, place them on a plate.
Put the almonds to toast in a pan if you don't have them toasted, once you have them, in a bowl mix the spinach into pieces, the toasted almonds and the strawberries. Make a simple vinaigrette with the olive oil, and the balsamic vinegar of modena.
Place the filling on each of the Parmesan cheese tartlets and enjoy a different salad.
