Today we are going to prepare a salad with cauliflower, a low-calorie vegetable rich in vitamins (especially vitamin C) and minerals.
It also has potato, carrot and egg. We will put a Homemade Mayonnaise that we are going to lighten with natural yogurt so that it is not a too caloric sauce.
Give it a try because it's a great way to present the cauliflower to the kids.

A rich salad with cauliflower and light mayonnaise.

Ingredients
- 850 g unpeeled potato
- 350 g cauliflower florets
- 170 g carrot
- 4 eggs
- Pitted olives
For the mayonnaise:
- 1 egg
- A splash of lemon juice
- 150 g of sunflower oil
- Sal Island
- 150 g of natural yogurt
Preparation
- We wash the potatoes and make a cut in the skin.
- We wash the carrots and also make a small cut.
- We put both the potatoes and carrots to cook in water.
- We put the eggs to cook in another saucepan.
- We prepare the cauliflower florets and cook them too.
- When all the vegetables are cooked, drain them.
- We peel the potatoes, carrots and eggs.
- We chop both the vegetables and the eggs into small pieces, put everything in a bowl.
- We also put the pitted olives in that bowl. If they are very big we will put them in pieces.
- We prepare the mayonnaise by putting the egg, the splash of lemon juice, the salt and the oil in the blender glass. We emulsify it with the mixer.
- Once the mayonnaise is made, we mix it with the yogurt.
- We put our sauce in the bowl where we have the rest of the ingredients and we mix everything well.
- We place our salad in a large dish and serve it.
