These sticks are salmon, but still you can make the traditional ones with hake or any other white fish and firm meat. The crunchiness of the sesame adds texture and adds extra flavor. 4 salmon fillets (at least two fingers thick)
200 g flour
1 teaspoon of salt
freshly ground black pepper
2 eggs
olive oil for frying
150 g of sesame seeds (ajonjolí)
tartar sauce or ketchup to serve.

Preparation

Place the salmon fillets on a board and with a sharp knife cut them into sticks 10 cm long and 2 wide
Place them on a plate and reserve.
In a deep plate, put the flour with the salt and pepper (to taste) and stir with a fork.
Crack the eggs into another deep plate and beat them
Finally, in another deep plate, put the sesame or sesame seeds.
We pass the fish sticks through the flour, covering it evenly and shaking the excess, then we pass them through the beaten egg, letting them drain a little, and finally, we pass them through the sesame seeds.
Heat the oil and fry the salmon sticks one by one until golden brown, taking care not to burn the sesame
Use tongs or a skimmer to flip them.
In about 5 minutes you will have them
Take them out to a source with absorbent paper to release excess oil
Remove the paper and serve them accompanied by some vegetables such as a salad or some steamed green beans.
