Apart from wine, we can wash the sauces of our meat or fish dishes with drinks such as beer or vermouth. This liquor of wine and herbs, will give a special and slightly bitter taste to this salmon.

Salmon and avocado, two of my favorite ingredients to cook. If we add to this a very rich sauce, we have a spectacular dish

Ingredients

  • 4 salmon fillets
  • a glass of quality white vermouth
  • 1 red onion
  • 1 ripe avocado
  • some assorted-colored bell pepper
  • white pepper and salt

Preparation

  1. First we prepare a mincemeat of vegetables cut very small.

  2. We will cut the avocado into thin slices at the last minute to prevent it from blackening.

  3. Season the salmon fillets with salt and pepper and brown them on both sides in a deep frying pan with a little oil. We will do it first for the skin area.

  4. We reserve the salmon in the oven at a low temperature to keep it warm. In the same oil that we have cooked it, we pour the vermouth and let it reduce for a few minutes over medium heat. Add the chopped vegetables and lightly sauté.

  5. Pour this reduced and blended sauce over the salmon and garnish with the avocado slices. Add salt and pepper.

  6. If you prefer to enjoy a sauce flavored with another drink, you can substitute the vermouth for cava, vodka or a dry white wine.
