Today we show you how to prepare a single sausage ragout and we suggest some other option to bring it to the table.
In the image you can see it accompanying a good plate of polenta and portobello mushrooms but you can serve it with mashed potatoes and any sauteed vegetables.
Another option is to use it for your dishes pasta or rice. In any case, you will like it, because it is loaded with flavor thanks to the sausages and vegetables that we will peel at the beginning of the recipe.
Sausage ragout
A consistent dish, ideal for the coldest days.

Ingredients
- 1 splash of extra virgin olive oil
- Carrots 2
- 1 small onion
- 1 celery twig
- 200 g of sausage
- 600 g of tomato paste
- Some basil leaves
- Sal Island
- Pepper
- 2 portobello mushrooms
- Polenta or mashed potatoes
Preparation
To prepare the ragout, peel and chop the onion. Peel and chop the carrots as well. We wash and chop the celery stick. We put these three ingredients in a large saucepan and poach them with a drizzle of extra virgin olive oil. Add a little water if necessary.
We chop the sausage and incorporate it as well.
Sauté it along with the rest of the ingredients.
Now add the crushed tomato, salt, pepper and basil.
We let everything simmer for at least 20 minutes.
We clean and chop the mushrooms. We sauté them in a frying pan with a drizzle of extra virgin olive oil.
We prepare the polenta.
We serve both the ragout and the mushrooms on a bed of polenta or on mashed potatoes.
