400 gr chanterelles
Half an onion
5 eggs
50 ml of cream
Extra virgin olive oil
Provencal herbs (thyme, rosemary ...)

Preparation

Clean and wash the chanterelles. Once you have them, cut them into medium pieces, and leave them reserved. In a frying pan, put three tablespoons of extra virgin olive oil, and sauté the onion, cut into very small pieces. Add the chanterelles and salt and pepper. Let it all go by.
In a bowl, beat the eggs with the cream and a little salt. Pour the egg mixture over the chanterelles, and stir until we get the texture of the egg that we like best. Better if it is juicier and the egg is little done.
