Sea bass in spiced salt with thyme and lemon

Cooking with salt allows us eat the products with a lot of flavor and without added fat. Anyone who has already tried some salted fish or meat will know that it is not salty at all. To give a spark to the sea bass that we are going to cook, we are going to add some spices to the salt to flavor it. Lemon and thyme are good for this fish, for example. Do you prefer other herbs or spices?

Ingredients: 1 sea bass, 1 lemon, fresh thyme, pepper, coarse salt for baking (proportion 1 kg of fish = 1 kg of salt more or less)

Preparation: We first prepare the salt for baking by grating the lemon peel. Mix the salt with the lemon, some peppercorns and the fresh thyme. Spray with a little water to make it a little compact and let it rest for a few minutes.

We make a bed of salt on the baking tray to place the sea bass on top, which will only be clean of entrails and scales. On the fish we place some lemon slices and cover with the rest of the salt.

With the oven preheated to 180 degrees, we bake the sea bass for about 20 minutes until we see that the salt has hardened and browned, possibly even cracking.

To serve the fish we break the salt crust and clean the granite sea bass well.
