Shrimp Souffle

Ingredients for 4 people: two tablespoons of butter, two tablespoons of flour, one tablespoon of tomato extract, one beer, four egg yolks, six egg whites, salt, ground pepper, half a tablespoon of tarragon and a cup of chopped shrimp.

Preparation: Heat the butter until melted and add the flour, stir gently and add the tomato extract and the beer and continue stirring until you have a medium thick sauce.

We remove it from the heat and season it with a little pepper, salt and tarragon. We add the yolks and beat well, while on the other hand we are making the whites to the point of snow and we add it too. Finally we add the chopped shrimp and stir everything very well.

Put in a greased souffle mold and in a very hot oven for 25 minutes. it is served very hot.
