750 gr. Iberian pork tenderloins
500 gr. peach in syrup
200 ml of white wine
1 tablespoon of mustard
50 gr. brown sugar
Sal Island
Pepper grains
Olive oil

Preparation

Make the pork tenderloins into medallions about two fingers thick.
Salt and pepper them and leave them reserved while we prepare the peach sauce.
In a bowl, mix the mustard, sugar and about 4 tablespoons of the peach syrup.
Heat a pan and add the prepared sauce mixture. When it is at its boiling point, add the glass of white wine and the peppercorns. When we notice that the sauce has reduced, add the peaches in syrup cut into strips and let them absorb the flavor of the sauce over low heat. Let everything cook for about 8 minutes.
Prepare a griddle and cook the grilled pork tenderloins, at their point so that they are juicy. Once ready, place them on a plate and serve a little sauce next to each sirloin.
