500 gr of spaghetti
600g whole canned pear tomatoes
4 garlic cloves, crushed and skinless
4 tablespoons olive oil
10 anchovies in olive oil
2 tablespoons capers
4 tablespoons pitted black olives
2 tablespoons chopped parsley
1 teaspoon thyme
1 teaspoon oregano

Preparation

Cook the spaghetti while we prepare the sauce.
Heat the oil in a saucepan over medium heat, and add the crushed and minced garlic. Before it browns, add the rosemary, oregano, and chopped parsley. Stir for a few seconds and add the well-chopped anchovies with part of the oil from the can. Crush again with the wooden spoon and stir.
Add the peeled tomatoes with their juice, the chopped black olives and the capers. Let everything cook for 20 minutes, with the lid on and watching to stir occasionally. Put a pinch of sugar to remove the acidity of the tomato. Try the point of salt and if you see that it lacks a little, add a little more.
Drain the pasta once cooked, and add it to the sauce. Serve your spaghetti putanesca very warm.
