For the bechamel:
1 medium onion
2 large carrots
30 ml of aceite oliva
55 gr de harina
300 ml of milk
Sal Island
Pepper
Nutmeg

For the breading

Flour (XNUMXg)
1 egg
Bread crumbs
Olive oil

Preparation

Chop the carrot in a food processor so that it is very fine together with the onion. Prepare a frying pan with olive oil, and sauté the onion until it becomes transparent (approximately 10 minutes). After that time, we added the chopped carrot and cooked everything for about 5 minutes.
Add the flour to the pan and saute it for about 5 minutes without stopping stirring so that it does not stick to us. After this time, we put the warm milk, salt, pepper and nutmeg. We keep stirring with the help of some rods until we get the fine and thick texture we want.
We pour the béchamel on a tray and cover it with plastic wrap. We let it rest in the fridge for about 4/5 hours so that the dough is consistent and cool.
Once that time has passed, we make the croquettes the way we want and pass them through the flour, then through the egg, and finally through the breadcrumbs.
We fry in abundant hot oil and brown them on all sides.
Once we have them, we let them drain on absorbent paper, and we accompany them with whatever we want, a salad, a good meat or some French fries.
