As the days go by snacks and breakfasts get complicated. Usually we always prepare the same sandwiches, sandwiches, cereals, etc.. Today we have prepared some special mushroom and cheese pancakes that are made in a moment and that are perfect for a complete snack or to accompany a dinner.

Ingredients
- 4 Mexican pancakes
- 3 eggs
- 50 ml of milk
- 200 gr of mushrooms
- 200 gr of grated cheese
- A tablespoon of butter
- Two spoons of olive oil
- Sal Island
Preparation
Heat a frying pan with a little olive oil. Clean the mushrooms and chop them. Sauté the mushrooms until they are done and once they are cooked, set them aside.
Beat the eggs and milk in a bowl for about 30 seconds, until everything is mixed, add salt, and once you have everything, pour the beaten eggs into the pan with a little olive oil and make a scramble with them of eggs. Once you have them, leave reserved.
Prepare the corn pancakes, and put a little grated cheese in the middle of each one, the French tortilla, the mushrooms and again, a little more grated cheese.
Fold the tortillas and place each one in a pan with a little butter. Brown each of the tortillas on one side and then the other until the cheese has completely melted.
Serve them very warm, you will see how good they are!
