Ingredients
- 300 g raw spinach
- 300 g of raw and sliced mushrooms
- A small onion
- 2 eggs
- 300 ml of liquid cream for cooking
- Olive oil
- Sal Island

Preparation
- We prepare the rolled mushrooms. We immerse them in water to clean them and remove the dirt. We will wash the spinach and cut it into pieces.
- We start peeling and cutting onion into very small pieces. We put a large frying pan on the fire with a drizzle of olive oil, let it heat up and we add the onion. We let it sauté without turning brown.
- We add the drained mushrooms and we let them cook. When they are golden, we set aside 12 pieces to decorate the muffins at the end.
- We incorporate the spinach little by little While they are sautéing, as they have a lot of volume we are adding them in batches. Season with salt and pepper and turn around until we see that the spinach has been reduced and done.
- We choose a tray to make muffins or cupcakes and go filling the cavities with the mixture that we have prepared. We heat the oven to 180 °.
- In a small bowl we pour the liquid cream and the two eggs. Season with salt and pepper and mix well.
- We cast the cream mixture inside the cavities where we have the mixture of spinach and mushrooms.
- We will put it in the oven for 25 minutes to cook. We will know that it is done when we observe that they have been browned on top. When they are cold we can unmold and garnish with the mushrooms.
