For the vinaigrette sauce:

4 tablespoons of extra virgin olive oil
3 tablespoons sugar
2 tablespoons of white wine vinegar
2 tablespoons cider vinegar
1 tablespoon toasted sesame seeds
pinch of paprika

For the salad:

1 bag of clean spinach
1 spring onion finely chopped
150 g dried cranberries
80 g almonds, shelled and toasted (with pine nuts or almonds it also looks great)
120 g crumbled fresh or goat cheese

Preparation

After washing the spinach (if they are not the kind that are already ready to eat), we dry them to remove any excess water.
To make the vinaigrette, in a small bowl, or a jar or bottle with a tight-fitting lid, mix the oil, sugar, vinegar, sesame seeds, and paprika.
Beat or shake well until fully combined.
It will be enough to mix the spinach, onion, blueberries, cheese and almonds in a large salad bowl and dress it with the vinaigrette.
Stir gently to distribute evenly.
