A fresh and spring salad that the same applies to us to share in the middle of the table that to accompany a meat or fish. The Dried cranberries They can be bought in any supermarket (at least I find them easily) but, to bad ones, we put raisins. Variants? For the vinaigrette sauce: 4 tablespoons of extra virgin olive oil, 3 tablespoons of sugar, 2 tablespoons of white wine vinegar, 2 tablespoons of cider vinegar, 1 tablespoon of toasted sesame seeds, a pinch of paprika.
For the salad: 1 bag of clean spinach, 1 finely chopped spring onion, 150 g of dried cranberries, 80 g of peeled and toasted almonds (with pine nuts or almonds is also great), 120 g of fresh cheese or crumbled goat cheese.
Preparation: After washing the spinach (if they weren't the ones that are already ready to eat), we dry them to remove any excess water. To make the vinaigrette, in a small bowl, or a jar or bottle with a tight lid, mix the oil, sugar, vinegar, sesame seeds and paprika. Beat or shake well until fully combined.
To prepare the salad, simply mix the spinach, onion, blueberries, cheese and almonds in a large salad bowl and dress it with the vinaigrette. We stir gently to distribute evenly.
