Spinach with mozzarella and fried egg

Do you like spinach? Today we will prepare them in a simple way. We are going to cook them in a saucepan without adding water. We will only put a drizzle of olive oil and a few cloves of garlic. They will be done in a moment.

To make them more attractive we are going to accompany them with some fried eggs, with salt and a little pepper to give them life.

Ingredients
For the spinach:
  • 500 g spinach
  • A splash of olive oil
  • Two cloves of garlic
  • Sal Island
  • 1 or 2 mozzarella balls
For the eggs:
  • 4 eggs
  • Olive oil
  • Sal Island
  • Pepper
Plus:
  • 50 g pine nuts
Preparation
  1. We start the recipe by washing the spinach well. We drain them well and dry delicately with a clean cloth or kitchen paper.
  2. We put oil in a wide saucepan. Add the garlic and, when they begin to brown, add the clean and dry spinach. Let's salt.
  3. We cook them over low heat until they are as seen in the photo.
  4. Once done, we put the mozzarella drained and in pieces, distributing it on the surface.
  5. We put the saucepan on the fire and, without stirring, we let the mozzarella melt.
  6. In a frying pan, brown the pine nuts (about two minutes will be enough).
  7. We take out the pine nuts and reserve them.
  8. In that same pan we put olive oil and fry the eggs.
  9. We serve by putting the spinach with mozzarella, a fried egg with salt and pepper and some toasted pine nuts on each plate.
