Do you like spinach? Today we will prepare them in a simple way. We are going to cook them in a saucepan without adding water. We will only put a drizzle of olive oil and a few cloves of garlic. They will be done in a moment.
To make them more attractive we are going to accompany them with some fried eggs, with salt and a little pepper to give them life.

- 500 g spinach
- A splash of olive oil
- Two cloves of garlic
- Sal Island
- 1 or 2 mozzarella balls
- 4 eggs

- 50 g pine nuts
- We start the recipe by washing the spinach well. We drain them well and dry delicately with a clean cloth or kitchen paper.
- We put oil in a wide saucepan. Add the garlic and, when they begin to brown, add the clean and dry spinach. Let's salt.
- We cook them over low heat until they are as seen in the photo.
- Once done, we put the mozzarella drained and in pieces, distributing it on the surface.
- We put the saucepan on the fire and, without stirring, we let the mozzarella melt.
- In a frying pan, brown the pine nuts (about two minutes will be enough).
- We take out the pine nuts and reserve them.
- In that same pan we put olive oil and fry the eggs.
- We serve by putting the spinach with mozzarella, a fried egg with salt and pepper and some toasted pine nuts on each plate.
