Preparation

In a pot we put 4 tablespoons of olive oil. Cut the meat into squares, season it with salt and pepper and brown it in the pot.
We cut an onion, a tomato and a carrot into pieces. Sauté everything with the meat and let it simmer for about 25 minutes.
After that time, add a glass of white wine and leave it for a couple of minutes over high heat to reduce, then add a glass of water to reduce so that the meat is tender. We add the saffron.
When we see that the water has reduced, we remove the vegetables from the meat and pass them through the mixer.
