The strawberries They are in full season and right now they look and smell spectacular in the markets. So I took the opportunity to prepare this recipe for strawberries in sweet pepper sauce. It is not a usual recipe but it is delicious, especially if we accompany it with cream or vanilla ice cream ... pure sin !!
We are going to make the sauce with orange juice and flavor it with cinnamon and Sichuan pepper, which is not exactly pepper, but is highly scented with a hint of lemon and bergamot.

Ingredients
- 500 g of strawberries
- 50 butter g
- 80 g of sugar
- 200 g orange juice
- 1 level teaspoon (dessert size) ground cinnamon or 1 cinnamon stick
- 1 teaspoon (dessert size) Sichuan pepper
- Zest of 1 orange
- Zest of 1/2 lemon
- 50 g of Cointreau
- 50 g of Brandy
Preparation
Put the butter and sugar in a pot. We mix it and melt it at medium temperature until it starts to bubble.
Add the orange juice, orange and lemon zest, cinnamon and pepper. Let it reduce for about 10 minutes over low heat, stirring from time to time so that the ingredients mix.
Meanwhile, we wash and clean the strawberries removing the stems and cut them into quarters.
Next we add the brandy and Cointreau. We let everything reduce together for about 5 minutes over medium heat so that the alcohol evaporates well. We will see with the liquids they emulsify and become an aromatic sauce.
Lower the heat to a low temperature, add the cut strawberries and carefully stir for 1 minute so that they are all soaked in the sauce. Remove the pot from the heat and serve immediately.
