We have chosen filo dough to be able to fill them with collard greens, soy sprouts and minced meat and thus recreate the famous spring rolls. If you like to elaborate oriental dishes this recipe will be perfect as it is easy and quick to make. Accompany her with a sweet and sour sauce and savor the crunchy part of this pasta.

Ingredients
- 350-400 g collard greens or cabbage
- Half an onion
- 100 g of minced beef
- A handful of canned bean sprouts
- A few sheets of filo dough
- 1 beaten egg
- Olive oil

Preparation
We cut the cabbage into thin strips and we put them to fry in a large frying pan with a drizzle of olive oil. We will stir from time to time so that it cooks and meanwhile we go cutting the onion.
We cut the onion and we add it to the cabbage, stir well and let everything cook together.
In a much smaller pan we add a small splash of olive oil and add the minced meat. You have to stir and crush the meat so that it peels off and cooks. We will let it brown.
When the cabbage and onion are almost cooked, add the bean sprouts and minced meat. We stir for a minute more so that it is finished doing.
We prepare our filo dough sheets. You have to be careful with this dough not to expose it too much to the air because it dries right away. From each large leaf we will cut it into two parts that are rectangular and elongated.
To form the triangles we will start by throwing a large tablespoon of the filling in the lower part of the filo dough.
With our fingers we catch the right peak and we will direct it to the left and up.
We do the same again but on the contrary. We catch with our fingers the left beak and bend it to the right and up.
We fold again two more times from one side to the other, repeating the same steps until the dough is almost exhausted.
If we have reached the end and we have a little lap left, lwe will fold and glue it with a little bit of beaten egg.
We place all the triangles in a source that can go to the oven and we will bake them with heat up and down, to 180 ° for 8 minutes.
Once baked we can serve them warm and crisp. We can accompany them with sweet and sour sauce.
