Ingredients

  • 1 kg. boneless lamb shoulder
  • 1 lamb kidney
  • 25 gr. bacon
  • 1 cebolla
  • 1 egg
  • 1 sour apple
  • 1 Tomate
  • 250 ml. meat broth
  • 50 gr. breadcrumbs
  • fresh parsley chopped
  • pepper
  • shawl
  • melted butter

Preparation

  1. Fry the kidney very clean in a frying pan with oil and chop it very well.

  2. Finely chop the onion, tomato, apple and bacon. Mix these ingredients with the breadcrumbs and the egg. Season with salt and pepper and add a little parsley to taste.

  3. We preheat the oven to 200 degrees and in the meantime we spread the lamb meat. Season with salt and pepper and distribute the filling, leaving the edges free. Roll up the lamb, butter it and transfer it to a baking dish.

  4. Bake the lamb for the necessary time (approximately 2 hours), turning it from time to time and watering it with broth. If we see that it is beginning to brown and it is not yet done on the inside, we cover it with aluminum foil.
