Ingredients
- 400 gr of whole mushrooms
- 5 tablespoons of extra virgin olive oil
- 1 glass of sherry wine
- 150 gr of grated mozzarella cheese
- 100 gr of grated Parmesan cheese
- 12 butcher sausages
- Some breadcrumbs
- 1/2 onion
- Sal Island
- Pepper
Preparation
Chop the onion into very small pieces. Clean the mushrooms and remove the stem. Heat a frying pan with a couple of tablespoons of extra virgin olive oil. Add the onion and let it brown. Crumble the sausages and add them to the skillet. Let them cook with the onion and salt and pepper. Once they are almost done, add the glass of Jerez wine and let it reduce.
Once we have the sausages ready, put them in a bowl and add the two grated cheeses and the breadcrumbs. Mix everything together, and leave some reserved mozzarella cheese to put on top of each mushroom before putting them in the oven.
Preheat the oven to 180 degrees.
On a baking tray, put a little extra virgin olive oil, and over the oil, place the mushrooms. Fill each one of the mushrooms with the filling, and put a little grated mozzarella cheese on top.
Bake for about 20 minutes at 180-200 degrees.
Serve them and enjoy them very warm !! They are delicious!
