Ingredients
- 12 thin chicken fillets
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 4 eggs
- 250 gr of frozen spinach
- 6 tablespoons ricotta cheese or cottage cheese
- 12 small slices of mozzarella
- Olive oil
- 200 gr of pomodoro sauce

Preparation
Roll out the chicken fillets on the cutting board and season with salt and pepper. Put the oven to preheat to 180 degrees and prepare a non-stick mold with a little olive oil.
In a bowl, prepare the breadcrumbs with the two eggs. And keep it reserved.
In another container put the defrosted spinach in small pieces, the other two eggs and the ricotta cheese or cottage cheese. Mix everything together, and put a tablespoon of the filling in the center of each chicken breast, keeping the seam end of the breast facing down so that the filling does not escape. Dip each chicken fillet in the egg and breadcrumb mixture, and place on the baking tray. When you have all the breasts in place, spray each of the breasts with a little olive oil on top (to avoid going overboard, you can use a spray).
Bake the breasts at 180 degrees for 25 minutes, and after that time, take them out. She incorporates the tomato sauce and on it the slices of mozzarella. Bake again until the mozzarella has completely melted (about 5 more minutes).
Serve on a plate with a little tomato sauce and grated Parmesan cheese.
