This is a very traditional and typical dish of our land. It is a fried stew suckling lamb with vegetables. the offal are the viscera of the animal, that for many can be a real delight. In this case we have not discarded them and we have made this delicious dish, without a doubt it is another way of cooking these pieces of meat with an exquisite suckling lamb flavour.

- 1 whole suckling lamb
- 1 cebolla
- 4 garlic
- 1 red pepper
- 200 g peas
- 4 large artichoke hearts
- 3 medium potatoes
- 100 g baby broad beans
- 2 small cayenne peppers (optional because it's spicy)
- 3 Bay leaves
- Sal Island
- 300 ml of aceite oliva
- Heat the oil in a frying pan. While we peel, wash and cut diced potatoes to fry them. Put them in the pan when the oil is hot and let them brown. We drain them, salt them and set them aside.
- We take the offal and we clean it well everything we don't need. We cut it into small pieces and heat 100 ml of the remaining oil from the potatoes. When hot, add the meat. We stir several times to make it go away frying and browning.
- Wash and cut into pieces onion and red pepper. we peel the garlics and cut them into small pieces. We pour it all into the meat and stir.
- We prepare the peas, broad beans and artichokes. We also add it to the frying. We season with salt, bay leaf and cayenne pepper. Stir well to fry, turning from time to time.
- Add the two tablespoons of Homemade fried tomato and let everything continue to cook. If it is too dry, before the vegetables have been cooked, we can add a splash of water for consistency. Once the vegetables are soft, we will have our dish ready.
