1/2 cup unsweetened cookies
2 tablespoons butter, melted
200 gr. white cheese in cream
1/2 cup powdered sweetener
1/2 cup mashed cooked pumpkin
250 ml. whipping cream
2 gelatin sheets
spices (cinnamon, vanilla ...)
chopped nuts or other topping

Preparation

Mix the chopped biscuits with the butter to form a paste like the usual cheesecakes, sandy and compact. We distribute it on the bottom of a cake mold and put it in the fridge.
We make the cream of the cake beating the sweetener with the cheese with the electric rods until it is smooth.
Add the pumpkin paste, the spices, half the cream and mix again.
Separately, we dilute the gelatin (previously soaked in water to soften it and drained) in the rest of the hot cream. Add this to the pie crust.
Pour the cream over the mold with the biscuit base and leave it in the fridge to set.
Sprinkle with nuts or put a cheese topping.
