1 kg of ripe quinces
800 g sugar
The juice of a lemon

Preparation

Wash and peel the quinces with the help of a peeler or a knife. Cut the quince pulp into pieces and moisten them with the juice of a lemon while we put them in a container. Add the sugar and stir to mix well with the quince.
Once we have everything mixed, we leave it macerating all night. You will see that the next day, the quince has become much softer, which will make cooking easier.
Prepare a saucepan and place the quince with the juice that it has released from the sugar and cook it for about 45 minutes. We will see how the liquid thickens and the quince changes color and remains golden.
When we see that everything has become thick, we crush it with the help of a blender. Put it in a container and leave it in the fridge. You will see how after an hour the quince will have been solidified.
Once we have the cold quince, we pass a knife between the quince paste and the mold, and carefully unmold it.
