I recently bought a piece of pork tenderloin on sale at the market and froze it. I didn't know what to do with it until I found this recipe. Better skill than strength when it comes to cut the tenderloin into a giant steak and stuff it.

Ingredients

  • 175 gr. dried cranberries
  • 1.5 kg. pork tenderloin open in a roll-up book
  • 125 ml. white wine
  • 300 gr. cooked spinach
  • 120 gr. cream cheese
  • 1 cebolla
  • 2 cloves of garlic
  • chopped parsley
  • 40 gr. of butter
  • oil
  • pepper and salt

Preparation

  1. First of all, we put the blueberries to soak in 250 ml. of water for a couple of hours.

  2. We extend the loin on a flat surface and season it with salt and pepper.

  3. Spread it with the cream cheese and spread the spinach on top, half of the dried cranberries, the chopped onion, the grated garlic, a little fresh parsley and the butter in pieces.

  4. We roll up carefully so that the ingredients do not come out and we tie with a cord if we see it as necessary.

  5. We place the meat roll in a large frying pan with oil, brown it on both sides to seal it and cook it a little. Then we put it on a baking tray.

  6. We bathe it with the wine, salt and pepper again and sprinkle with more parsley.

  7. We bake the tenderloin at 200 degrees for about 30 minutes.

  8. Add the blueberries with their water to the meat and continue baking until the meat is tender.

  9. Once ready, we pass the loin sauce and blueberries through the blender and strain.

  10. Slice the meat and serve with the sauce.

  11. Introduce vegetables such as cabbage or red cabbage in the tenderloin instead of the cooked spinach.

  12. You can also change the fruit to make the sauce if you prefer plums or dried apricots to blueberries.

    I'm not a big fan of stuffed turkey I think there are many others
    recipes that are just as delicious for Christmas Eve, I think a good
    option for these dates is a loin
    stuffing for Christmas there are countless recipes to prepare it,
    with very diverse ingredients and very easy to cook,
