Tomato and burrata salad with arugula sauce

Ingredients
- 4 large tomatoes
- 50 g arugula
- 4 burrata cheeses
- 2 ripe avocados
- 300 ml of aceite oliva
- 100 ml of white, modena or apple vinegar
- Sal Island
- Ground black pepper
- 4 handfuls of walnuts, chopped
Preparation
The explained recipe is for only one diner. we wash the tomatoes and cut three slices that we will place on a plate.
We open the avocado in half and remove the skin and seed. we will prepare half avocado, since it will be for a salad or diner. Cut it into thin slices and spread it over the tomato. We add salt.
We cast arugula in a container next to olive oil and vinegar. With the help of a mixer we beat the ingredients.
Place in the center of the plate the burrata cheese.
We open the cheese in half and season with salt and pepper.
Place some leaves around the plate to garnish and dress with our arugula sauce.
Finally we add above the chopped nuts.
