A very easy salad that, if made with a good presentation, can win a lot: tomato salad with mozzarella. Being such a simple salad it is very important that the ingredients are of good quality, especially the tomato. For me the best are the «pink type» tomatoes, but any other that you like and that is sweet and at its exact point of maturity would be worth it.

We will also use sweet chives, and to make it less powerful, we will soak it in very cold water with salt so that the itching is softened and it remains firm and smooth.

We have also used garlic chips or sheets of dried garlic to give it a crunchy touch. They are totally expendable.

  • 1 large tomato at its optimum point of ripeness (pink type)
  • mozzarella balls (amount to taste)
  • black olives (quantity to taste)
  • ¼ mild chives
  • Dried garlic slices or garlic chips (optional)
  • salt (for example, flake salt or Maldon salt)
  • oil
  • oregano
  • vinegar (a good option is Modena)
  1. We cut the chives into very fine julienne strips and put it in a bowl with very cold water and a pinch of salt.
  2. We remove the skin from the tomatoes and cut them into slices. We arrange them in a flat and wide plate.
  3. Place the mozzarella and black olives on top.
  4. We drain the chives very well and put it on top.
  5. Season with salt and oil.
  6. We put the garlic chips and finish adding oregano to taste.
