Let's go with a good, easy appetizer with affordable ingredients for this weekend. We have wanted to give an italian touch to this stuffed omelette using arugula and cheese ricotta cheese, which is very similar to our cottage cheese.

Ingredients

  • 6 eggs
  • 200 gr. ricotta cheese
  • 1 tablespoon of liquid cream
  • fresh arugula
  • grated cheese powder to taste
  • oil
  • pepper and salt

Preparation

  1. Mix the ricotta (it is necessary to remove the whey well, pressing and letting it drain for a while) with the cream, the grated cheese to taste, the chopped arugula and a little salt and pepper.

  2. We prepare a basic French omelette in a wide pan, so that it is thin. We let it temper.

  3. We spread the filling well spread out on the tortilla, leaving the edges free, and we roll it up on itself.

  4. We let it cool well in the fridge so that it is compact and we can cut it well into slices. We will need a sharp knife.

  5. In order not to lose the Italian tone of the recipe, you can substitute the arugula with fresh and large basil leaves and a mince of sun-dried tomatoes in oil.
