As most of you will know, veal nuggets are appetizing sandwiches that are not very large and somewhat elongated that contain a fine fillet inside. The grace is that the bread is tender and crunchy at the same time, warm, and that the fillet carries a little of the sauce that remains when ironing it, to give the sandwich juiciness.

Pepitos are always in the mood. Mid-morning, as an aperitif, for a snack or for dinner. Keep in mind that the fillet of veal is fine and tender so that the children can eat it at ease. The trick is to add the salt once they are done, because that way they don't release so much water, otherwise they lose tenderness. To enrich the pepito, we have also added a slice of semi-cured cheese.

Preparation: While we iron the fillets with oil, we heat the bread in the oven or on a griddle. In the last moment, When the fillets are done, we put a little salt on them and the slice of cheese so that with the heat of the pan it melts. Then we open the bread, put a little sauce on the fillets, put the meat with the cheese and close. To eat!
