Cut the zucchini, carrot, peppers, tomato, onion and garlic into small pieces. Put all the vegetables in a pan with a little olive oil and a little salt, and cook over low heat. Stir occasionally and cook until tender.
We prepare a deep plate and put the couscous. We heat a glass of water in the microwave until it boils. Add the water to the couscous dish and add a little salt and a drizzle of olive oil. We mix everything well.
