If you find almonds at a good price you can take advantage and make these simple almond cookies.
They are made with chopped, crushed almonds. And then they also have an almond on top which, in addition to telling us what the cookies are, is delicious for having been baked.
I use almonds with skin but, of course, you can use this peeled dried fruit. A good trick for peeling almonds is to blanch them.
In the step-by-step photos you will see that they do not have any complications. We will shape them with our hands, making balls.

Almond cookies, very easy
A simple recipe for cookies made with ground almonds.

Ingredients
- 150 g crushed almonds
- 1 egg
- 100 g of sugar
- 100 g of sunflower oil
- A few drops of vanilla aroma
- 80 g of wheat flour
- 8 g baking yeast
- About 50 whole almonds to decorate
Preparation
We put the egg, sugar and sunflower oil in a bowl. We mix those ingredients.
We add the ground almonds, wheat flour and yeast.
We mix and integrate everything well.
We form balls with that dough. We place them on one or two baking trays covered with baking paper. We put an almond in the center of each cookie.
Notes
We bake at 170º for 15-20 minutes, until we see that our cookies are golden.
