Ingredients
- 2 bags of fresh mozzarella pearls
- 1 / 2 cup of flour
- 1/2 cup breadcrumbs
- 2 eggs
- 1/2 cup of ground kikos
- Tomato sauce or barbecue sauce to accompany
- Extra virgin olive oil
Preparation
Drain the fresh mozzarella pearls, and dry them. While you prepare the rest of the ingredients, keep them in the fridge. Heat the olive oil in a deep frying pan so that the pearls cook well without breaking.
Prepare several bowls or cups. In one of them put the flour, in another the two beaten eggs, in another the crushed kikos (crush them with the mixer), and in another the breadcrumbs.
Take the pearls out of the fridge and pass them first in the flour, then in the egg, then in the breadcrumbs, and finally, in the kikos.
When the oil is very hot, introduce each of the mozzarella pearls little by little, and let them brown for about 40 seconds. Then let them cool on an absorbent paper to remove the excess oil.
Serve the pearls with your favorite sauce.
