Ingredients

  • 1 round of beef of about 700 grams
  • 3 liters of water
  • 1 cebolla

  • 2 sprigs of celery
  • some branches of parsley
  • 10 black peppercorns
  • 1 egg
  • 1 egg yolk
  • 50 grams of capers
  • 2 anchovy fillets
  • 150 grams of tuna in oil
  • the juice of a lemon
  • olive oil
  • salt.

Preparation

  1. Preparation: we clean the vegetables well and put them to cook in a pot, with three liters of water, pepper and salt, for about 20 minutes. With the broth, we will cook the round of veal, for about 75 minutes over a low heat, once cooked we remove it and let it cool.

  2. We are going to prepare the sauce, putting in the blender, an egg, plus a yolk, 25 grams of capers, anchovies, tuna, lemon juice and 1 tablespoon of olive oil. We can add a tablespoon of the previous broth, we add the remaining oil, a glass, until a smooth and smooth sauce is left.

  3. We will serve the meat cut into slices, with a little sauce on top, garnishing with the rest of capers. Serve cold.
