When preparing it, you will see that it makes a lot of foam. The important thing is to be patient and wait for it to have the right consistency. The cream keeps very well in the refrigerator for ten days.

Ingredients
- 220 g of sugar
- 130 ml of cream
- 125 ml water
- 100 butter g
- 70 g white chocolate
Preparation
We chop the chocolate with the knife and reserve it.
In a saucepan we put the water and sugar.
We put it on the fire. Heat it for a few minutes, until it starts to have a slight golden color.
Add the cream and mix well. Be careful because it will foam a lot.
We let it cook, mixing from time to time until the mixture acquires a thicker, very creamy consistency.
We remove it from the heat and let it rest for a few minutes. We add the white chocolate.
Also the butter in pieces.
We mix until everything is well integrated.
We put the cream in a glass jar or use it to fill our cookies or for the preparation that interests us.
