This recipe for whole wheat pumpkin muffins is specially designed for Halloween but we can enjoy it at any time of the year because they are delicious

Ingredients

  • 1 cup pumpkin puree (with 1 small pumpkin)
  • 300 gr. whole wheat flour
  • 200 gr. brown sugar
  • 1 teaspoon of baking soda
  • half a teaspoon of baking powder
  • 1 teaspoon of salt
  • 150 ml. milk
  • 50 ml. mild flavor olive oil
  • 100 ml. sunflower oil
  • tu frosting preferred

Preparation

  1. Peel the zucchini, remove the seeds and cut them into cubes. We cook it either in the oven at 180 degrees in a dish and covered with silver paper or boiled. When the pumpkin is tender (we drain the cooking broth) and grind it to get a thick and homogeneous puree. Reserve a cup of this puree to continue with the recipe.

  2. Mix the dry ingredients in a bowl: flour, sugar, baking soda, yeast and salt.

  3. On the other hand, we mix the pumpkin puree with the two types of oil and milk.

  4. Gradually add the flour mixture to the pumpkin mixture (we can use a strainer) and mix well until a homogeneous mass is obtained.

  5. Fill some muffin or cupcake molds with the dough until they are three-quarters full. We put in a preheated oven at 180 degrees until when poking them with a toothpick in the center, it comes out clean. That means the muffins were made correctly. Let cool out of the oven on a wire rack.

  6. We decorate with frosting and some elements typical of the Halloween party.
