Zucchini stuffed with white fish

Preparation

1. Wash the zucchini well and cut the ends. We partially remove the skin in strips, as we see in the photo, and cut them into two or three large pieces, depending on their size, so that we can hollow them out and fill them.

2. We put them in the microwave at maximum power for a few minutes, until they are cooked but whole. We can also make them in the oven or boiled. When they cool down, we use a fruit emptier or a teaspoon to extract all the pulp, which we will chop finely.

3. Chop the spring onion and fry it in a pan with a little olive oil. when it is tender, add the fish and season with salt and pepper.

4. Add a heaping tablespoon of flour, mix well so that it browns slightly, and then add the cold milk. Season with salt and pepper and cook over low heat, stirring until the consistency of a soft béchamel is obtained. Add the zucchini meat that we had chopped and mix the filling.

5. Fill the zucchini with this mixture and sprinkle them with grated cheese.

6. Gratin in the oven or in the microwave (without oven function) until the cheese is golden.
